The aroma and taste of this white are due to the difficult and time consuming task of keeping the fermenting wine at the extreme lower end of yeast tolerance. While time consuming, fruit flavors and aromas are preserved at the fresh fruit level closest to the grapes at picking. This memorable white is great with fresh fruit, cheese and appetizers, but truly smashing with prawns, shrimp and crab. With a .65 RS, it is a bit off dry, and should be served at around 51 degrees, or slightly chilled.
